basic recipe for making Paal Payasam

Paal Payasam

also known as Kheer, is a delicious South Indian dessert made with rice, milk, and sugar. Here's a basic recipe for making Paal Payasam

Ingredients:

1/2 cup Basmati rice (washed and soaked for 30 minutes)
1 liter whole milk
1/2 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
2 tablespoons chopped nuts (almonds, cashews , and/or pistachios)
1 teaspoon ghee (clarified butter)

Instructions:

Drain the soaked rice and set it aside.

In a heavy-bottomed pan or pot, bring the milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pot.

Once the milk comes to a boil, add the drained rice. Lower the heat to medium-low and let the rice cook in the milk. Stir occasionally to ensure the rice doesn't stick to the bottom.

As the rice cooks, it will absorb the milk and soften. Allow the rice to cook until it is completely cooked and the payasam reaches a creamy consistency. This can take about 30-40 minutes.

While the rice is cooking, in a separate small pan, heat a teaspoon of ghee. Add the chopped nuts and sauté until they turn golden brown. Remove from heat and set aside.

If using saffron, you can dissolve a pinch of saffron strands in a tablespoon of warm milk. This will add a lovely color and flavor to the payasam.

Once the rice is cooked and the payasam has thickened, add the sugar and mix well until the sugar is dissolved. Let it simmer for an additional 5-10 minutes.

Add the cardamom powder and the saffron milk (if using) to the payasam. Mix well to distribute the flavors.

Turn off the heat and allow the payasam to cool slightly.

Garnish the paal payasam with the sautéed nuts.

You can serve the paal payasam warm or chilled, as per your preference.

Enjoy the creamy and flavorful paal payasam!

Note: This recipe is a basic version of paal payasam. You can customize it by adding other ingredients like raisins, grated coconut, or condensed milk for variations in flavor and texture. Adjust the sugar quantity according to your taste. basic recipe for making Paal Payasam:
