Ragi Koozh health drink in Tamilnadu



Ragi Koozh is a nutritious and traditional porridge made from finger millet (ragi) that is popular in South India, particularly in Tamil Nadu. It is a cooling and refreshing dish, perfect for hot summers. Here's a simple recipe to make Ragi Koozh:


Ingredients:


1 cup ragi flour (finger millet flour)
3 cups water
1 cup buttermilk or curd (yogurt)
Salt to taste
For the Keerai Thuvayal (Spinach Chutney):


1 cup fresh spinach leaves (or any greens of your choice)
1/4 cup grated coconut
2-3 green chilies (adjust to your spice preference)
1 small piece of tamarind (about 1/2 teaspoon tamarind pulp)
Salt to taste
Instructions:


In a mixing bowl, add the ragi flour and 2 cups of water. Mix well to form a smooth, lump-free paste. You can use your hands or a whisk to ensure there are no lumps.


In a large cooking pot or vessel, add 1 cup of water and bring it to a boil.


Slowly pour the ragi paste into the boiling water, continuously stirring to avoid lumps.


Reduce the heat to low and continue cooking the ragi mixture for about 15-20 minutes, stirring occasionally to prevent sticking.


Once the ragi koozh is cooked and has reached the desired consistency, remove it from the heat and let it cool down to room temperature.


Once it has cooled down, add the buttermilk or curd (yogurt) to the ragi koozh and mix well.


Add salt to taste and mix again.


For the Keerai Thuvayal (Spinach Chutney):


Wash the spinach leaves thoroughly and blanch them in boiling water for a minute. Drain and let them cool.


In a blender or food processor, add the blanched spinach, grated coconut, green chilies, tamarind pulp, and salt.


Grind the mixture to a smooth paste. You can add a little water if needed to achieve the desired consistency.


To serve Ragi Koozh:


Traditionally, Ragi Koozh is served in earthenware pots to keep it cool. Serve the koozh in individual bowls and accompany it with the Keerai Thuvayal (Spinach Chutney) or any other chutney of your choice.


To enjoy, mix a spoonful of the chutney into the Ragi Koozh before eating. The combination of the cool ragi porridge and the flavorful chutney makes for a delicious and wholesome meal, especially during the hot summer months.


Note: Ragi Koozh may have a natural earthy flavor, but the addition of buttermilk and the chutney enhances its taste and nutrition. Adjust the consistency of the koozh by adding more water or buttermilk if needed.
